Servers tagged survival 1.12 are survival-mode servers that run on Minecraft 1.12.x (often 1.12.2), usually to support older plugins/modpacks or to keep the pre-1.13 mechanics and item IDs. They play like normal survival with building, mining, mobs, and player economies, but without newer features from later versions.
