SkyFactory servers run the SkyFactory modpack or a close clone: you start on a tiny sky island with minimal resources and progress through quest-style goals, using mods to generate materials from nothing, automate production, and expand into multiple dimensions. Multiplayer is usually co-op islands or separate islands with trading and shared economies.
