No premium servers are ones that allow cracked/offline-mode clients to join without a paid Mojang/Microsoft account. They usually run in offline mode, so they rely on plugins for login/registration and extra anti-grief/anti-alt measures, and they often have different moderation and security tradeoffs than premium/online-mode servers.
